Update:

So I think this means:
Use only PB2 for cost and simplicity
Use a stripped down version of the Gem Multi board
Use a PB2 with one ES9080Q for every 8 channels
Use USB ethernet (RGMII is there but probably too hard)
I'm thinking one cool thing might be adding Eurorack power input and using that to derive +-10V, to keep it simple I could leave off the TS jacks and bring the audio headers on to another PCB with +-12v in and opamps for +-10v audio...maybe limit voltages in software (if supported)?

I created another thread as I didn't want to take the Gem thread off-topic. I will be buying a Gem Multi for sure, I want multiples but I can only stretch to one.
@giuliomoro does the ES9080Q custom low-latency driver only work on the PocketBeagle 2, I'd like DC outputs only, so if I could buy a ES9080Q and make a little (perhaps ±10V) board for my own Eurorack tinkering and make it work using your driver that would be amazing?
Multiple ES9080Q on a cape would be extra amazing, no idea if that would work?
I'll happily use PB2, it's at a great price point, an SBC with embedded ethernet would be a bit nicer but onboard ethernet is certainly not required. Maybe the driver requires something specific to PB2, maybe McASP (Multichannel Audio Serial Port), no idea?
Is the driver open-source and/or mainlined?
